Rally Time: Better Eat Salsa

By Suzanne Corbett, STLSportsPage.com Food/Travel Editor

OK Cardinal fans it’s time to rally. Rally big time.  Get the rally hats ready and start waving those towels. And don’t forget the salsa. Matt Carpenter’s salsa Cardinal fan have to get serious. Start eating salsa.  Matt Carpenter’s Bueno Mojo Salsa has pulled us through before so I’m banking on win to keep us alive with the salsa tonight.

To achieve the win, I suggest eating more than salsa and chips. I’m going to eat as such salsa as I can buy including it as an ingredient in everything I eat today. If you need a little inspiration on how to use that salsa for the big win, I have a few suggestions on how to cook on the fly with salsa for the win.

1: Use it as a topping. Great on grilled or baked chicken, grilled steak, or even hot dogs.

2: Mexican Salsa Fish: Place fish fillets in a baking dish, top with salsa and sliced black olives. Sprinkle with a little shredded Jack Cheese and bake at 375 for 15-20 minutes until fish is flaky.

3: Enhance pre-packed chili Just stir in the amount of salsa you like. Use as much as you like.

4: Add is Mac ‘n Cheese

5: Blend a jar a salsa and use as a base for Bloody Marys

6: Quick Chicken Tacos Pulled chicken from the deli mixed with a jar of salsa. Fold into soft tortilla and garnish with fresh cilantro.

Carpenter’s Bueno Mojo Salsa available exclusively at Schnucks Markets.  If you can’t find it, it’s OK. Eat the Salsa you can find. And remember, we’re eating for the win.
