Fun Ice Cream Recipes from “The Cookie Rookie”
Becky Hardin partners with us in letting use her recipes. She has several fun recipes involving ice cream on her website.
She has recipes from how to make ice cream, as well as recipes that include ice cream as an ingredient.
For National Ice Cream Day we found she had two that intrigued us– the most interesting was the Alcoholic Root Beer Float, but her grilled peaches also look great. With the Blackstone Grills being the rage in recent times, she has come up with a healthy desert made of peaches and ice cream. Depending on your needs you can choose regular ice cream, low carb ice cream, no sugar ice cream or sherbets or frozen yogurts of your choice.
Check out her website for many more ideas. TheCookieRookie.com
Alcoholic Root Beer Float
- Vanilla Vodka: I like Smirnoff. It’s smooth and clean tasting. Whipped cream-flavored vodka would also work well.
- Vanilla Ice Cream: Use your favorite brand, and if you can get vanilla bean, go for it!
- Root Beer: Everybody will have their own thoughts on this, but my favorite root beer brand has always been IBC. My dad used to buy it by the case and swear, there was no better root beer in America. I have tried many different types and have never found one I like better. This drink will work with whatever your favorite type is, so try to locate whichever brand brings back the best memories.
Grilled Peaches and Ice Cream
Grilled Peaches and Ice Cream is a simple, healthy dessert, perfect for grilling season! Warm peaches are crisscrossed with char lines, smothered in ice cream, and laced with caramel sauce. “The mix of textures and flavors is so good!”– Becky Hardin.

More on Clementines…
Clementine’s Ice Cream’s Flavor Temptress, Tamara Keefe, shared the inspiration behind the flavors: “Travel has always been one of my greatest sources of inspiration. Every destination leaves behind a memory—a meal shared with locals, a dessert discovered in a tucked-away café, a flavor I simply couldn’t stop thinking about long after I returned home. This collection is my way of bringing those experiences back and sharing them with our guests. Each flavor is inspired by a place I’ve visited and a moment I’ve lived, transforming cherished travel memories into ice cream. I like to think of them as edible souvenirs—each scoop offering a taste of another culture, another destination, and the joy of discovering something new.”
International Travel Collection for National Ice Cream Month Includes:
- Crème Brûlée (Paris, France) – Rich French vanilla custard meets a golden swirl of crunchy caramelized sugar inspired by the classic crème brûlées served in Parisian cafes.
- Om Ali (Cairo, Egypt) – A dairy-free take on Egypt’s beloved bread pudding folds date syrup-soaked golden raisins and walnuts into spiced, buttery coconut ice cream.
- Mango Lassi (Mumbai, India) – Ripe, golden mango with a refreshingly smooth mango yogurt base.
- Brigadeiro (Rio de Janeiro, Brazil) – Brazil’s beloved dessert features sweet chocolate ice cream bursting with chocolate sprinkles and fudge swirls.
- Dubai Chocolate (United Arab Emirates) – This dark chocolate ice cream with a rich pistachio butter and crunchy kanafeh swirl captures luxury in one scoop. (Available beginning July 19.)
- Matcha Lemon Curd – Subtle and sweet green tea ice cream served with bright and tart lemon curd. Take a moment to find your Zen within this beautiful flavor combination. (Available beginning July 19.)
